Banana Pound Cake (with Variations!)
This recipe is SO fun to "play with".....I have added chopped nuts, or a lil cream cheese, or choc.chips to the recipe on occasion.......even raisins!
It is one step UP from your standard Banana Bread!

To frost, I have:
used sifted powdered sugar
OR
a drizzle (chocolate OR butter)
OR
regular frosting.
SO versatile!

1 package (18 1/2 ounces) yellow cake
4 eggs (room temperature)
1/3 cup oil
1/2 cup water
1 1/3 cups mashed bananas (about 4 medium)
1 package (3 3/4 ounces) instant vanilla pudding
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla
Combine all ingredients in large mixer bowl. Mix until blended, then beat at medium speed for 4 minutes. Turn batter into greased and lightly floured 10 inch tube (Bundt) pan........or can use large loaf pan or 13 x 9.....
Bake in 350 degree oven for 1 hour or until done. Keep checking with toothpick....don't overbake! or it'll get a lil tough!
