Tile roof with asphalt shingles around A/C Units

My home has a tile roof and the roofing around the A/C units is asphalt shingles, where the tile roof meets the shingles there is mortor in this area to seal the tile to the shingles.
I want to replace the shingles but do not know the correct and best was to go about it , a few questions that come to mind:
1. Do I remove the mortor therby possibly damaging the tile roof ?.
2. Do I cut the asphalt shingles along the edge and not remove the mortor and after installing the new shingles seal along the edge where it joins the tile with some type of sealer ?.
3. Do I just add the new shingles over the old and seal along the edge where it joins the tile with some type of sealer ?.
Any assistance would be greatly appreciated.

Thank You

Hard to give specific advice given what sounds like a mess and not having seen it..........

But, the AC units should be tied-in in with the underlayment in a permanent fashion with steel flashings and counter flashings. Anything less is asking for ongoing problems.
If you can post the photos somewhere, or email them, specific ideas might come to mind.
