new roof

We need to replace our present roof which is asphalt with a metal roof so just a couple of questions for the experts here
our roof has always felt spongy even when new so I want to add another layer of sheathing to stiffen it up so I am assuming
1 rip off everything down to the wood
2 lay the new sheathing on top of the old nailing at the studs
3 so anything between the 2 layers?
then new felt and add the metal

I'm not a roofer but what'd do would be to nail strapping over the old plywood and then attach the metal to the strapping. That should stiffen up the roof plenty but with less weight.
