Open concept roof design. What to choose?

I'm planning to build a house in the mountains in the carribbean. It will be of block construction with a poured ring beam. It's dimensions are 30' x 30' (perfect square). I want a gable roof that is 1/2 pitch using wood rafters and purlins and that will be completely open underneath (loft idea - no ceiling joists). I want to avoid a 'timber beam' idea, due to weight and complexity of construction and possible scarcity of quality timbers in the area. Is there a way to have the type of roof I want? What is it called? I have seen something they call collar beam roofs, but will that work for the 30' span? What will do the job? Thanks.

The name I use for that type of ceiling is cathedral ceiling.

Other than that, I know next to nothing about their construction and design, particularly in the caribbean. Maybe someone else here can give some insight about them.
