Hip Roof Addition

I am going to remove a flat roof and attach a hip roof to my house. The hip roof will attach to an existing gable roof. I know I have to figure out the pitch on existing gable roof, but don't really know how to attach it. Any help on this is appreciated.

Roof

Basically, you tear off the shingles down to the gable roof sheathing and install a plate on the sheathing to fasten the bottom ends of the new rafters. The bottom ends of the rafters will have compound angles to accommodate the pitch of the existing roof and the pitch of the added roof.

Really appreciate your advice. I'm thinking I have to apply same slop on opposite side from where this attaches, so it looks uniform, right?

Should the pitch on hip roof match pitch of gable roof I am attaching to or does it matter at all? I guess what I'm concerned with is what the finish will look like. I would like the valleys to match angle/look of hip rafters when all is done. Hope this makes sense.
