If the shingles are curled up where the new shingles won't lay flat - they old definitely should have been removed, otherwise it shouldn't show too much although close inspection will always reveal 2 layers of shingles.

As already said, the only way to not see the old shingles is to remove them. The old shingles will be visible along the entire edge of the roof.
