Spent this weekend tearing out the old, preparing the wall and installing the new setup.
Upgraded the 100 panel to a 200 panel with main and ran heavier cable...

Open to any other ideas but I figure my best option is adding a double lug to the transfer switch OUT, increasing the wire gauge going to the CH7CC and then replace the CH7CC with a 200 amp box....
