I'm pretty techy and mechanical, I've just never adjusted gas flow on a valve.
No it def doesn't heat the same. The flames are way to small and it's continuing to run due to inadequate heat.

I replaced the pilot, couple and the valve. Now I have strong pilot tthat stays lit but burners don't come on?

I know the couple send a signal identifying that it's safe.

Any thoughts as to why...
