I did this on my house when I installed vinyl (now replacing it with Fiber Cement) and what I did was heat it with a heat gun and bend it. It took me a few pieces to get it right but it worked OK....

I've been using DAP Sidewinder for fiber cement. It' says it works great on wood, cement, vinyl and aluminum. I imagine it would work for stucco.
