Uneven Wall

I will be installing a laminate floor on top of a concrete base soon. My problem is that two of the walls that will boarder the floor are made of brick and ever very 'bumpy'. So much so, that standard moulding cannot be placed there to transition the wall to the floor.

The best solution I can think of right now is to not use moulding and to put wood filler/putty between the laminate floor and the brick wall to close the gaps that is some spaces can be up to 3/4".

Does anybody have any other suggestions on how to handle this?

Your idea will work but have you considered undercutting the brick and running the floor into the undercut? There are saws and grinders that will do the job and you will find rental units so you won't have to buy the tool.
