Have you thought about putting new laminate over the old. Rough up the surface with sandpaper. Get a can of copntact cement and follow the directions on the can. A WORD OF WARNING> Contact cement sticks. When you put the new laminate down it is stuck and you cannot move it around to adjust it.

Use some dowel rods or thick strips of cardboard to lay between the old laminate and the new. Position the laminate and remove the center dowel or piece of cardbaord. Press the laminate down and then continue the process until you are complete. Trim the excess around the edges with a router or you may sand it down.

Some tops are simply held down by gravity. Usually though there are some screws holding it down. Look for them under the top, near the front edge, back edge, and/or side walls of the cabinets.
