Epoxy Vs. Polyurethane

Epoxy Vs. Polyurethane
Help! I just bought a house & it has wood floors. Have had 2 quotes - one for 2 part waterborne epoxy & one for polyurethane. The Epoxy guy swears that the floors must be taken down to bare wood because 1. They had carpet on them & the soap residue from carpet cleaning will cause the epoxy (or even poly) to bubble & peel very quickly and 2. The orangeish color will not be removed by just doing a 'skim coat'.
He also claims epoxy is 500X's more scuff resistant & will last longer than poly - I'm concerned about yellowing more than scuffing as it's going to be a low traffic house w/no pets.
Of course, Mr. Epoxy is more expensive than Mr. Poly. So now I am at a loss - take the floors all the way down or risk peeling, bubbling and an orange floor? Go with Epoxy guy (3 coats) or Poly guy (2 coats)?
Anyone?

The poly is oil based, is that what we're assuming? I think I've pretty much decided to go with the epoxy just to be on the safe side, plus that third coat for the same price as 2 coats of poly.
