Cool RV flooring for wide range of tempertures

I need to replace flooring in my RV. The problem I want to solve is what to use in a space that gets below freezing and above 100F with varying humidity.
I was leaning to a LVT glue down to plywood, buy I think this will fail in the heat due to different expansions.
Second choice is a click and lock floating engineered wood. Fortunately the floor size is small, so I think the 1/4" gap at all ends is enough for the expansion and contraction under the 3/4 quarter round.
Any thoughts on what to look out for in those conditions?

Almost all RV's use LVT with no issues.
