Laminate around steel door jambs

I am installing the Mannington laminate flooring and they show how you are supposed to undercut the jams and put the floor under it.
The doors in my house are steel doors as are the jambs, what should I do? Should I just hold out the 5/16" distance and caulk the gap? (not sure how that would look). Got one other problem area at the entry way to another room. I need to go about half way through the jamb with the flooring, not sure how to cut that one out either.

Good job for a sharp pro. The metal jambs can be cut or you can hold the planks short and use color matched putty or metal edge moldings that have been finely cut and fitted.
