Advice to replace old trap and install shut off valves
I'm looking for some advice/pointers on what I'll need to do (and purchase) to tie in the new sink to the existing piping in the wall, and install some shut off valves for the supply lines. We bought a home that was originally built in 1959 and are in the process of remodeling one of the bathrooms. We have new sinks and faucets to install, and my plan was to install traps with clean-outs. It seems the drainage piping is galvanized, and as you can see isn't in the best shape.
I'm assuming PVC p-trap would be easiest to work with?
Any advice is much appreciated!

Welcome to the forums.
Yep, I'd go PVC but I wouldn't worry about a clean out on something this simple, the parts come apart easily enough if something gets caught.

Can't comment on supply side since I don't see a supply but the waste pipe going into the wall is threaded and you would attach the PVC to that - it's simpler than I think you're envisioning.

I have a few comments,
What pipe material waste line is in the wall? Steel? Copper?
The water pipeprobably is galv nipples. You would need to turn these out to replace with new, and valves. The trouble is they often break. You have to be very careful. Replace with brass nipples and the proper valves.
If they break you will be cutting the wall open.
