Water way too hot after faucet replacement

Hello Guys,

I have a 3/2 house and recently replaced the sink faucets in the 2 bathrooms. One bathroom is a singe sink and seems to be fine. The master bath has dual sinks. I replaced both faucets and now the water is extremely hot in the sinks also in the shower. I could not get one hot side valve to close on disassembly of the old faucet so I turned off the main water line for the house. I got everything everything removed and then was able to close the stuck hot side valve. I did notice the valve was turned open many turns. I only turned all valves no more than 1 turn open probably less to try and regulate the temp. This did not seem to work. Alos both hot side valves are pretty hot to the touch. The single bath is not. It is just warm. So what did I do wrong?

What happens when you turn on the cold side only, to the affected fixtures?
