Drying time? humidity important?

I live in southern Alberta, Canada... a somewhat 'dry' climate. In fact, we never dry our dishes. Put them in the dishrack and they are bone dry in 2 minutes.

My question is re the drying time of tile cement and grout. Are these drying times universal or are they dependent on the humidity of the ambient air? For instance, we just put some tile down and the instructions said not to step on for 24 hours. Is this time at all dependent on air humidity or even air temperature?

Well me being a lightweight. I have walked on tile set in the early afternoon, the following morning. Do not grout for at least 24 hours!

I wouldn't chance it, as tempting as it is. You can't hurry a good thing.
