Hopscotch pattern layout & Installation.

I’m laying tile in a Hopscotch or Modified Hopscotch pattern on a kitchen floor. The area is roughly 100 ft^2 and “L” shaped.

What is the proper technique? Should I begin near the center of the room and work out or should I begin along the walls and work in?

Ordinarily, one starts at the center of the room and works out.

Yes, I've seen that in books. I'm wondering why. It seems like beginning in the center works well with simple patterns but is this the case with more complex or random patterns?
