Redoing kitchen backsplash

I know it has been said to replace the drywall after taking the old tile off. However since the main problem would be with the protective paper gone off the drywall and it would make the wall to absorbent, why couldn't I use a paint like kiltz or something like that to keep it from being to absorbent. What do you think?
Thank you for your help

Replace the sheet rock. Once the paper face is gone, the integrity of the substrate is gone. It may seem to work fine at the start, but you could and likely will develope problems months down the road. Just the moisture coming out of the primer could start the process of the gypsum falling apart. Little dings are one thing to fix, but large area of missing paper is a whole 'nother story.
