take down wall now what?
We are taking all the ceramic tile off our tub surround.After the tile and the walls come down what type of board goes up Green board? backerboard? we will be putting up new ceramic tile. Water has damaged the walls after 30 years .

Moisture barrier (6mil poly) on the studs, then 1/2" cement tilebacker board. 
Use thinset to instal the tile and use fiberglas tape on the backerboard seams as you install the tile.
Caulk the tile to the tub after allowing a 1/8" gap in that location. Also caulk the inside corners. You can get colored caulk to match any grout color.
