Unless you worked with epoxy in the past, stick with traditional cement based grouts, if you really want epoxy Laticretes Spectrolock is more user friendly and sold at Lowes, still epoxy though.
What type of tile and joint sizes do you have, counter and backsplash?, this would help.

It is glazed ceramic tile with joints 1/8.
Now I also used a ceramic tile adhesive, but I heard thinset is better. Should I continue using the adhesive or stop and switch to thinset?
Also, sorry for all the questions but what kind of sealer is recommended after grouting and should I still use regular grout instead of epoxy?

I wouldn't use the adhesive on the countertop and depending on size of tile on the backsplash, whether I would use it there, what type of adhesive is this?
Use regular grout, if 1/8" joints, it's up to you which one, sanded or unsanded, both will work, the unsanded will give you a smoother finish, sanded a rougher look.
Aquamix Gold 15 from HD is a good sealer.

You can use the mastic on the backsplash if you like, if the tile is 8x8 or smaller and ceramic, not stone.
For the countertop tile, use a modified thinset you mix with water, Versabond will work fine and sold at HD also.
How is the countertop constructed?
