Extra cement board
I have a portion of wall I decided I don't want to put ceramic tile on but did put Durock up. Is there anything wrong with skimming over the unwanted portion of cement board with drywall mud and painting it? Thanks.

That's overbuilding - and can only do good. I've deliberately used cement board instead of gypsum where damage is likely.

Incidentally, cement board also makes a neat permanent form for poured cement. It's rigid like a temporary plywood form, but stays stuck to the concrete and you can mud and paint it smooth.
