WHEN YOU SET BACKERBOARD IN PLACE-WHEN YOU SET THE BOARD ON THE MORTAR DO YOU STEP ON IT TO PUSH IT INTO THE MORTAR SO IT SQUISHES THE EXTRA MORTAR UP? HOW MUCH TORQUE DO PUT ON THE SCREWS WHEN TIGHTENING THE BOARDS TO THE FLOOR?

Shouldn't be a lot of thinset oozing up, but yes step on it to ensure it is embedded in the thinset. Use a 1/4" square notch trowel to comb the thinset under the board.
Set the screws so the heads are flush or just under the face of the cement board.
