Do you just want to remove the build up from the grout lines, or the whole floor? If its the whole floor, here's a link you might find helpful. I recently stripped and sealed about 1100 sqft of my slate tile floor, and wrote an article about it because I had a REALLY hard time finding information, so I figured I'd share.

Refinishing and Maintaining a Slate Tile Floor - Without getting a Divorce

I first tried just stripping old polish w/ ammonia as the polish bottle suggested, but I think there was years of buildup from the previous owner, so we wound up using an industrial chemical stripper (bought at a janitorial supply store) and one of those floor buffers with a "stripping pad" on it. (You can rent them at home improvement stores.)

Hope this might help! It might help you get more answers if you give a few more specifics about exactly what you want to do, and what you know about your floor (what kind of polish, etc.)
