My enclosed back porch currently has vinyl tile that is in pretty bad shape in some spots. I want to put ceramic tile on top of this. Would it be ok to cover the old tile with 3/4" plywood to create a level subflooring. The floor itself is solid, just uneven.

I would use 1/2" cement board instead of plywood. Put it down per the manufacturers recommendations. Check for deflection on the floor. If the deflection is too much, the tile will have a tendency to crack. Tile has good compressive strength and very little tensile strength.
