mortar the tile, the floor, or both?

which way is best? and how do i remove excess mortar in the tile joints?

Generally you put in on the floor only with a notched trowel

Whatever tool fits in the gap between the tiles can be used to remove mortar in the joint space - pencil, scrap of wood,...

I've also heard that it helps to put the tile tight to the ones already down, press and slide over to get the right gap. That prevents thinset from bulging up between tiles.

With a little practice...it's gotta be easier than going back and cleaning the joints.....
