I won't use natural stone because any installed on a horizontal surface must be sealed, Can't see why a vertical surface in a wet area would be any different.

You need to seal the grout anyway so the marble will get a dose without even trying. Find a sealer that says it is safe to use on marble. Put the sealer into a spray bottle and spray the surface in small 2-3 foot wide areas, let sit for the recommended time before wiping clean with an absorbent cloth. Have lots of cloths around. I usually use a cloth that is damp with sealer from previous use to spread the sealer around to make sure everything got sealed before wiping dry and eventually buffing. Depending on your countertops, you may need to protect them as well.
