Schluter membrane

To tile a bathroom, do you only need to put membrane under the wet areas like a shower or does the whole bathroom need membrane?

The membrane is water proof so it only goes where water is present, they do make other types of isolation membranes but that is intended for floors as a substitute to CBU boards!

If I put membrane for the shower, what do I add for the rest of the floor? It's only subfloor so if I put tile backer then won't it be thicker than the membrane and not be level?

The Schluter membrane you are referring to is Kerdi. Kerdi is a complete shower solution. It goes on the floor, curb and walls of the shower at least to the shower head height. There is also a special drain that you will need to use with Kerdi. Google Schluter Kerdi. There website has a wealth of information on how the Kerdi system works including videos. I'm not sure what you are wanting to do outside the shower area. If you want to use a membrane on the floor outside the shower area you can use Schluter Ditra.

The shower curb separates the shower from the rest of the bathroom floor, don't forget the sloped shower pan insert!
