Most home centers (Lowe's, Home Depot) carry precut half sheets plus they have panel saws to cut a full sheet if you prefer.

since these sheets wont have the beveled edge is taping more of a hassle?

Sorry, you didn't; specify sheets of what - I was addressing plywood. Need someone else to talk about drywall.

I'm not aware of anyone making sheets of drywall smaller then 4' x 8'. You can cut your sheets down to 4' x 4' , but you will have twice as much taping to do if you do this. I have never mastered the task of taping and mudding so unless you are very good at it I suggest you sub-contract this job out and leave it to the pros.
Also, what kind of "finish" are you putting over your drywall? For example, if you are planning to install ceramic tile over it than the surface perfection of your drywall isn't as important.

Good luck.
