Will joint compund stick to old plaster walls? What i am wanting to do is thin out compund and apply to these old walls to hide imperfections.

It will, but only as well as any paint that is on the wall.

Might be a little more work than you wanted to do, but a friend of mine went through his house patching cracks and holes in his plaster with with a patch called hard putty i think. He then went through and retextured walls over the plaster and it came out really nice.
