Water Damage on Ceiling

The house I'm working on at one time was sectioned off into two apartments. The kitchen for the 2nd floor apartment was above what is now the downstairs dining room. Anyhow, the ceiling in the dining room has some bowing and discoloration from water spills/leaks in the 2nd floor kitchen. Mainly around the edge where I assume the sink was in the upstairs kitchen. Any ideas how this can be rapaired? I believe the ceilings are plaster. Any help would be greatly appreciated.
