Ceiling damaged from leaking roof

Help! We survived both Tropical Storm Isidore and Hurricane Lili but not without damage. I have a large hole in the roof over the master bedroom. Water was coming in from the drywall on the ceiling. The roofers will be out next week to take care of the roof but what should I do about the ceiling until I can get a contractor out to repair it?

I would like to cut the drywall out and remove the insulation but the ceiling has a decorative 20 to 25 degree slope. I cannot access the attic either. How would I cover the hole in the ceiling? The hole would be about 4 x 5 feet.

Is there anything I should do to treat the area because I am worried about mold too.

Since it just recently happened, cut out all of the damaged sheetrock back to the center of the nearest rafters, and remove all of the wet insulation and sheetrock to allow it to dry out the fastest.
If you have one, aim a circulating fan on the area to help dry it thoroughly.
Replace the insulation.
