best way to repair drywall surface before mudding

Question best way to repair drywall surface before mudding

I'm doing some remodeling for some friends, they had paneling which was glued to drywall, when we removed the paneling it ripped areas of the drywall surface off. We smoothed everything with a little sanding and started applying mud, but noticed that we were getting bubbles where the moisture from the mud was soaking into the uncoated drywall paper. We only did a small section as a test at first so, what would be the best and easiest way correct the drywall surface before coating the walls?

First coat should be a 20min hot mud left a little recessed. Than you can use a top coat mud to even it out.
