I have an old 100 year old brick home - well built. There are logs between the rooms and sheet rocked over. The ceilings have ceiling tiles on them that do not appear to be lowered. There is a ventilation vent in the living room. Is there any way to make this appear as a sheet rocked ceiling? If not how difficult would it be to put a new sheet rock in it? Would there be extensive cleaning or underwork needed before sheet rock could be applied?

For Drywall you need a frame that is plane, and the surface of attachment needs to be moisture free. There are also probably standards in your area for sheet thickness for ceilings, and the span between the ceiling joists when drywall is attached.
