textured ceilings

I would like to have my ceilings textured in the style they do in California and in New Mexico. The paint looks like it is laid on with a trowel then smoothed a little. It's very attractive. What kind of paint and technique is used. I will be hiring someone so instructions that I can relate to him would be nice.

I hate to tell you this, but you need to hire a professional texturer to do the job like you saw. This is not paint, it is mud with a coloring in it. Very expensive components, and must be mixed just right.
Only trial and error gives the experience for the ceiling you want. You ceiling is probably not the place to learn this. If you need to tell someone how to do it, find yourself another worker.
