I want to replace my sliding closet doors with bifolds and need to remove the apron of drywall that hangs down. The drywall has a factory finished edge and I am concerned about trying to cut the 3" or so off and finishing it with a neat edge.

Any suggestions on how to cut it off accurately and how to finish it for bifolds?

Don't try to be TOO neat about cutting it. Once the apron is out of the way, you'll be adding sheetrock to the bottom of the header. Tape the corner, texture and paint it, then install the bi-fold doors.
