Plaster or Drywall

I know that Plaster was used for most older houses, but I've heard of some local, High End Contractors going back to Plaster walls and ceilings. Has this area improved so much to make it a choice for expensive homes now. What would be the benefits ,if any , of having plaster walls against drywall.

One benefit is that plaster walls make for a much quieter house.

The plaster walls have a more traditional look and feel. You will have to pay a lot extra so thats probably why you only find them in more expensive homes.
