Bubbling drywall compound

Here's a problem I sometimes run into when applying the final coat of compound.

The compound, shortly after application, sometimes develops tiny bubbles, that burst and leave tiny holes that then necessitate the application of another skim coat of mud.

What causes this and what can I do to avoid this nuisance?

Possibly a little too much mixing, getting too much air in the mud, but would probably come out in with the final sanding.

This happens to me if I try to skim the coat a little too thin. I'm not sure of the mechanics at work, but easing up on the angle of your knife will stop this.
