Replacing a drywall ceiling

I have a 27x17 room that use to be divided. A piece of drywall was laid in when the wall was taken down and has begun to sag.
The ceiling has other flaws and defects that patching makes look even worse. My two plans are 1. tear it down and install new drywall or 2. cover the existing drywall ceiling with luan.

If you were to hire me, I would repair the ceiling as is and make it smooth. You can go that way or rip out and re do or go over the whole thing with 1/4" rock. Don't use luan.
