Finishing drywall questions.

First of all, why do drywall finishers mix the compound with water? Is it to dry faster or to be more workable? I find it is very workable enough right out the bucket. Also, what is the best way to fill large voids? If I put on too thick, it takes days to dry.

The water makes the mud smooth & creamy and easier to run. For a large void, best bet is to cut a plug of drywall to fill as much as possible and then mud over that, smaller voids can be filled with a setting type compound like Easysand, comes in dry form in a bag, # on the bag indicates setting time, comes in 15, 30, 60, 90, 120 min versions.
