How to mud around a shower
I am getting ready to mud around a new shower install. I was told to leave the sheetrock back one inch and fill in with mud between the sheetrock and shower edge. What kind of filler should I use. Is regular joint compund alright?

I wouldn't use joint compound, it is water soluable. Use either durabond or thin set.

I usually use quick set and then flat tape to the shower. Make sure after you caulk around it and do a good paint job.

Flat taping is how you tape drywall joints [not the corners]. If you have a wide area you are filling in with mud it is advisable to tape over it so as to elimnate any cracking.
