Anyone have any tips on how to avoid hitting water pipes when drilling through drywall?

Do you mean drilling through the drywall or screwing it? If drilling drill very carefully and find the pipes then avoid them.

I assume you have some knowledge as to where the pipes are located. Most walls are 1/2" thick so as tightcoat said go very carefully and stop at the first sign of obstruction.
