Requesting more Drywall advice

Thanks for answering my previous post about the cracks in my drywall.
I will go ahead and sand down those areas and retape.

I wonder if you could tell me what I should be looking for to know if the finish is smooth enough. We are doing the walls and ceiling of a room and the ceiling will not have texture on it so I suppose any defects will show easily.
How will I know when it is smooth enough? When I touch it I can feel some uneven areas- but to look at it I can't. What's important in the finish?

Ceilings are the hardest to finish because you can get a long angle view. If you can feel uneveness then it will most likely show up on a slick finish ceiling. Using a straight edge on the ceiling may help to point out low/high spots.
