Polyurethane vs. varnish vs. wood sealer

We have finished a screen room (in NW Florida). We have cedar planks for decking and exposed rafters and a ridge beam that we want to leave as natural as possible. Since it is in a humid, unconditioned environment we want to protect the wood. Any ideas on what is the best way to protect it?
Thanks.

Depending on how much rain gets to the decking you probably wouldn't want to use polyurathane. Poly would be ok on the rafters/ceiling although even satin finish will give it some shine. Clear sealers like Thompsons Water Seal don't generally have a long life span although being in an enclosed area will help it to last longer. A deck stain with a light cedar tint may be your best bet. As with any exterior coating in fla be sure to add extra mildewcide.
