Joint compound when applied too thick will crack as it dries. Finishing drywall is normally a 3 coat process. First you tape and bed, when dry apply 2nd coat of mud, sand if needed before applying 3rd coat which is always sanded.
I think you are just rushing the job. You can sand or fill the cracks as needed. Remember it is a multi coat process.

"Ditto the other answers",
When covering the tape, it should only be about 1/16 thick, if that. After a first coat is is normal to see little bits of tape here and there. Don't worry, it'll get covered the next coat.
Also make sure that you mix your "ready to use" mud, because it really isn't "ready to use"...
I hope this helps.

well
i must be doing it wrong if i put a light coat on the first time you can see the tape real good if i put ona heavy coat the first time it cracks. so far i have sanded down the seams and put on a really light coat and i can still see the center of the tape. and this is really not a problem on the walls its the ceilings thats hard to get right.

Don't worry about trying to cover the tape, work on applying smooth coats of mud. The better the mud is applied the less sanding you will have to do. 3 coats is standard but often more coats are used to get a good job.
Don't obsess about the tape, just apply the mud, you might be suprised when you noticed the tape disappeared without you looking
