Post Ceilings and walls a problem in cottage

We acquired my parents-in-law's cottage when they passed away last fall. Minimal upkeep had been done for several years due to their advanced age. My question is what to do with the kitchen/dining area ceiling and walls which are in need for serious help. (Before anything we will be seeing if the roof needs repair.) The kitchen ceiling is quite low (probably less than 7 feet) so we don't want to lose height. We thought about opening the ceiling to the rafters but probably too costly in this economy. I'm thinking of cosmetic covering such as tiles or wood planks. I also want to cover the wall with wood plank which would look like cottage siding. Any advice or direction in where I might find these materials which would not break our bank account would be appreciated.
Thank you

Hi leigh, can't really help on the materials, but would advise to check the insulation before you improve the covering surfaces. Being in GR you certainly know what cold is.
