Bathroom remodel

first time I've attempted anything like this, and I've run into some issues.

Bathroom has drywall installed over block. There is one big hole:

I plan to just fill it with regular weight pre-mixed mud. Any problem with that? Should I use one of those metal patches?

Also, slightly visible in that photo, I have a gap of up to 1/2 inch between the wall and ceiling. Before I ripped everything apart, it was covered by ugly molding. My plan is to buy some vinyl inside corner bead and staple it in place before mudding. Will that work?

Issue number 3 - I have gaps around the window frames up to 2" (top and bottom). Not sure the best way to cover these up. These were also hidden by wide molding.

Thanks!

Welcome to the forums!

You should be able to prefill all the above areas with premixed joint compound although a setting compound like durabond will do a better job [but it is harder to sand]

Corner bead is for outside corners, on inside corners you take paper drywall tape, fold it down the middle [it has a crease] and mud it in place. Large gaps should be prefilled first and then tape and mud after the prefill mud has dried. tape generally needs 2 more coats of j/c [dried between coats] with the last coat sanded and primed.

Both the area in the middle of the wall and the gap along the window will need to be covered with drywall tape. You might get away with not using the tape if you use a setting compound. Where the ceiling and wall meet must be taped unless you intend to install crown moulding to hide the gap.

What exactly are your finishing plans for the bath room?

Marksr hit it on the head. My only concern is what happened to the wire that was in the trench going down to where the junction box was? Did you remove it completely or is it still hanging out back there?
