Removing floating ceiling

Removing floating ceiling
Hi
I have a chalet with a Swiss roof in a 45 degree angle .
in the inside it has a ceiling about 3 meters from th floor .
The chalet is situated in Quebec so the winter is very cold and right nw is only a 3 seasons chalet which we will be insulate this summer to be able o use it in Winter .
We see some properties that they dont have the ceiling so you can see the 2X8 that made the structure of roof , you know those 2X8 or 2X10 that are in a 45 degree angle.
(In other words the part we want to remove the attic ).
We want to know how those places manage to insulated or keep the heat from escaping trough the roof ?, do we need insulation ?.
I hope i made myself clear .

Welcome to the forums!
You need insulation! It's possible the homes you looked at don't have insulation [I wouldn't want to pay to heat it] but it's also possible that wood and beams were added to give the illusion of an open attic, with insulation between the ceiling and roof.

yes it can be but im not sure , they look like there is not faux ceiling or extra beams to give the illusion .
I think is the same principle as log house , they dont have insulation but the logs are real wide , im not sure if the do the roof the same way .
I guess i better ask someone to let me inspect his roof .
