Beadboard Ceiling
My son is building a new house and is considering a beadboard ceiling in the master bedroom. The ceiling is gabled with Icynene foam insulation between the rafters. The builder wants to apply sheetrock to the rafters and the beadboard over the sheetrock. This seems unnecessary and a waste of money.
Is there a good reason to do it this way?

By beadboard, are you referring to full 1/2-3/4" thick T&G planks or beadboard paneling? If paneling, then, yes, the sheetrock is absolutely necessary as the panels will sag between rafters. If T&G, probably not. Not sure of his motives, but would be interested in them.

The beadboard will be full thickness tongue and groove. The only reason I can think of requiring both layers might be due to fire standards.

That is a good possibility, but I haven't lived in Atlanta for a number of years, now, so I don't keep up with their local requirements. It will require 2 1/2" finish nails to attach it to the joisting since it has to go the extra depth of the sheetrock. A good install won't allow the "out-of-squareness" of the room to show in the finish. It can be adjusted as you go and measure each board-to-finish to ensure a true run without an angle on the boards.
