We used plywood for our employee restroom walls. I had planned to paint the wood but the guy that I hired to do the ceiling convinced me to let him skim the walls with Durabond. There was some discoloration when he got done, but once we painted that was not an issue. It's been 8 years and the walls still look good & I'm telling you this restroom gets heavy traffic.
I'm just wondering why most folks seem to be so dead set against the idea?

Because joint compound never adheres as well to wood as it does to drywall. How did you address the joints? The only way I'd feel confident with using any type of j/c over wood is to apply a thin coat and then sand off basically everything except what is in the grain.
